Double Chocolate Brownie Cheesecake

Ok, so I love cooking & baking. Especially baking.  Got something sweet to make, I’m your girl!  But, with 2 kids, and everything that comes with two kids, my time in the kitchen has come down to the “necessary” only.  So I LOVE recipes that have only a few ingredients, and/or allow me to make something with minimal fuss and effort.

Even better if I can use ingredients off the shelf to create something that would take more ingredients and time than I have, but still look great 🙂  This double chocolate brownie cheesecake is just that.

 

Ingredients:

1 box Edmonds Cafe Style Double Chocolate Fudge Brownie (you’ll also need 2 eggs & 100g butter to make this)
1 pottle Meadowfresh Cheesecake filling
Fresh strawberries and/or chocolate to decorate

 

Method:

Make up the Edmonds Cafe Style Double Chocolate Fudge Brownie mix as per the instructions on the box.   I’ve made it in a greased springform round cake tin.

Once baked, let cool. Remove from tin and let cool completely.
Once cool, wipe the grease off the tin.  This is so the grease, which is now turned brown, doesn’t ruin the look of the cheesecake layer. Place brownie back into the tin, closing the spring completely.

Make up the Meadowfresh Cheesecake filling, as per the instructions for an unbaked cheesecake.

Spread on top of the brownie, and place in the fridge until the cheesecake layer has set.

Decorate with strawberries and chocolate, the icing that came with the brownie or any other fruit you prefer 🙂
